Our great friends at <a href=\"https:\/\/www.experiencetravelgroup.com\/cambodia\/hotel\/song-saa-resort\">Song Saa,<\/a> the super luxurious Cambodian beach resort have been kind enough to share a recipe with us from one of their excellent chefs.<\/p>\n<p>This one if for Amok Squid, but it could be easily adapted to use a firm white fish too.<\/p>\n<p>Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>&#8220;Amok is a major national culinary tradition in Cambodia and refers to the process of steam cooking a curry in banana leaves. It is often eaten during the Water Festival, which celebrates the reversal of the Tonle Sap River. This dish has an intoxicating and delicious scent, which comes from the use of a distinctive and complex spice paste called kroeung.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span><\/p>\n<p>100 grams\u00a0 \u00a0 * yellow\u00a0 kroeung<\/p>\n<p>200 millilitres \u00a0 coconut milk<\/p>\n<p>600 \u00a0 Fish fillet<\/p>\n<p>8 grams \u00a0 coriander leaves<\/p>\n<p>2 pc\u00a0 fresh chillies<\/p>\n<p>60 grams \u00a0 egg white<\/p>\n<p>2 tbsp\u00a0 fish sauce<\/p>\n<p>\u00bd tsp\u00a0 salt<\/p>\n<p>1 tsp\u00a0 sugar<\/p>\n<p>1 cup \u00a0 rice<\/p>\n<p>1 small \u00a0 banana leaf<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">Method<\/span><\/p>\n<p>Preheat the oven to 180C.<\/p>\n<p><span style=\"font-size: 13px; line-height: 19px;\">Season fish with salt and pepper. Put a medium sized heavy based pan on a high heat. Add squid shearing for 1 minute, and keep aside.<\/span><\/p>\n<p>Put a medium sized heavy based pan on a medium heat . Add the oil and kroeung to the pat. Cook this on a medium heat for 1 minute without it getting any colour.<\/p>\n<p>Add the coconut milk and bring to the boil. Once boiling, reduce to a simmer add fish sauce and sugar.\u00a0 This is called the amok sauce.<\/p>\n<p>Add fish and simmer for another one minute.<\/p>\n<p><span style=\"font-size: 13px; line-height: 19px;\">Set the sauce aside to cool. Once cool, put a few spoonfuls of the sauce in a separate bowl to finish the dish with later.<\/span><\/p>\n<p><span style=\"font-size: 13px; line-height: 19px;\">Give the rice a good wash and then place in a pot with 1 and half cups of water. Bring to the boil then <\/span>reduce<span style=\"font-size: 13px; line-height: 19px;\"> to a simmer and cover. Cook the rice for 10 minutes or until done and all the liquid has evaporated.<\/span><\/p>\n<p>Line an oven proof bowl with the banana leaves and spoon in the rice until half of the bowl is full.<\/p>\n<p><span style=\"font-size: 13px; line-height: 19px;\">Whip the egg whites into soft peaks and fold into the amok sauce.<\/span><\/p>\n<p>Flake the fish over the rice. Pour the amok sauce over the fish and rice so that they are just covered. Be careful not to overfill as the egg will expand and souffl\u00e9 slightly. Place the bowl inside a baking dish with a small amount of water (bain marie style) and bake for 5 minutes with 180c.<\/p>\n<p><span style=\"font-size: 13px; line-height: 19px;\">Remove from the oven. Reheat the sauce that was set aside earlier and pour over the amok.<\/span><\/p>\n<p>Garnish with chilli and coriander.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">Chefs Notes<\/span><\/p>\n<p>There are many forms of amok in Cambodia. Some are slightly thinner while others are thicker and resemble a souffl\u00e9 style. At Song Saa we have opted for a more traditional method. The flavour of this dish is centred around the kreoung, which you can adjust to your own individual tastes.
